Rhonda's Recipes

Deep Dark Chocolate Cake

2 c sugar
1 3/4 all-purpose flour

3/4 c cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 c milk
1/2 c vegetable oil
2 tsps vanilla
1 c boiling water

Heat oven to 350. Grease and flour two 9-inch round baking pans. In large mixer bowl combine sugar, flour, cocoa, baking powder, baking soda and salt. Add eggs, milk, oil and vanilla; beat on medium speed 2 minutes. Remove from mixer; stir in boiling water (batter will be thin). Pour into prepared pans. Bake 30 to 35 minutes, or until toothpick inserted in centre comes out clean. Cool.

Buttercream Frosting

6 tbsp butter
1/2 c cocoa
2 2/3 c confectioners' sugar
1/3 c milk
1 tsp vanilla
In small mixer bowl cream butter. Blend in cocoa and confectioners' sugar alternately with milk; beat to spreading consistency (additional milk may be needed). Blend in vanilla.


I've been making this cake for years. It is soooo good and very easy. I found it in the Hershey's cookbook.

I've tasted this cake - it's worth every point!! Some of the girls may not realize that you baked desserts for a local restaurant not so long ago.

Hey, I just realized that my traditional coanut pie didn't arrive on my birthday - NO guilt intended!!
Seeing as I'm on WW it's probably just as well.

Hi, I just found your blog from CWO. I totally agree that friends and family are more important than a clean house. The cake looks awesome, i love love chocolate, and all of my kids have been on a baking spree. I will give this to them to try.

Okay Rhonda...
I just made the cake..it looks and smells real yummy..will ice it once it is cool..
One question,...if I wanted to make the frosting but NOT have it chocolate (believe it or not I don't enjoy chocolate icing) what would I do? Just substitue more icing sugar or ???? ANy ideas???

Amy - You are putting me to the test. I honestly don't know if you could just eliminate the cocoa. I do recommend that you use a butter based icing. It would taste best with the cake.
