Awesome Banana Muffin Recipe


My family loves these. I first made these muffins using my Muffin Mania cookbook that was a wedding shower gift. After we moved last summer I couldn't find my cookbooks (until a month ago). Who would have thought to look in the garage?? I didn't. While my cookbooks were awol, I had found my same recipe on a blog CatCanCook.

3 or 4 Large bananas, mashed (the more bananas the moister, so I use 4)

3/4 cup white sugar

1 slightly beaten egg

1/3 cup melted butter

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups flour

Mix the mashed banana, sugar, egg and butter together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together, being careful not to over-stir! Pour into greased muffin tins, and bake in 350 degrees oven for approximately 20 minutes. Mmm! You can add chocolate chips or nuts, if you like.

I have the same recipe and my family also LOVES it. Made them one morning this week just for a treat! Makes the whole house smell good too. YUM!

Oh my gosh Rhonda, those look YUMMY! We are muffin maniacs here...as a matter of fact, my youngest son, Bailey, makes Muffins EVERY Monday! ;)

Thanks for stopping by. I would love to make your muffins but I would have to hide the bananas until they were ripe. In my house my kids devour them ripe or not as soon as I by them which is about everytime I go to the store. It is so bad that if I really need to save them for something I write "NO" on them with a sharpie marker. Isn't that terrible, telling my kids they can't have that healthy snack. I am such a bad mom.

Perfect timing!
I have all these frozen bananas and one of the kids asked me just yesterday if I would make banana muffins...maybe I'll try out your recipe on them.

I am going to try these...I have been looking for a "good" recipe, and I have a TON of bananas in the freezer just waiting for me...now a quick run to Wallyworld for some chocolate..wish me luck!!
