Rhubarb Custard Pie

Need a recipe for all that extra rhubarb?!


Rhubarb Custard Pie

2 egg yolks
1 c sugar
2 tbsp all purpose flour
1 tbsp melted butter
2 1/2 c chopped rhubarb

Beat egg yolks with fork. Add sugar, flour, and butter. Blend together. Add rhubarb and stir together. Put mixture into pie shell. Bake at 350 for 30-35 minutes.

Make it as a double crust pie, or put a meringue on top.

Enjoy! It's very easy and very yummy.

I remember when you lived next door and gave me this recipe. I still use it today and sometimes I add strawberries too :)

In all my pie baking years, I have never made or even tasted Rhubarb pie. My favorite is apple, with a fresh batch that I bring home from an orchard up in Michigan. But thank you for this recipe!
